This starts off as a fruit forward and crisp wine with good acidity, typical of cool climate pinot noirs that I love. This is made from Burgundy pinot noir clones, and has undergone spontaneous fermentation and then is partially aged in oak. This wine is from a south-facing site with a constant freshening breeze. A thin layer of loess over volcanic bedrock forces the vines to dig deep for sustenance, which provides a mineral and vibrant structure to the wine.
Flavours of perfumed strawberries, red cherries, even violets, give way to a slightly spicy and peppery flavours, with a much longer finish than expected. Another classic example of a terroir led wine.
The perfect wine for a turkey dinner, or to just sip on with or without food!
