Food Pairing: Hard cheese, salted almonds
Tasting notes: Botyrtised grapes are fermented until you get an extremely dry, sherry style wine. These are aged in barrels for around 3 years, and a layer of flor forms (similar to sherry) allowing for a bit of oxidation. As a result, when you smell this, it has the same aromas of a sweet Tokaj (Aszu) - with dried apricot, candied orange peel, ginger but it is extremely dry with nutty flavours
